Ingredients
  

  • 4 tilapia fillets
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 3 garlic cloves minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: ½ tsp paprika
  • Lemon slices for serving

Method
 

  1. Preheat the oven to 200°C (180°C fan).
  2. Pat the tilapia fillets dry and place them on a lined baking tray.
  3. Mix the olive oil, lemon juice, zest, garlic, herbs and seasonings.
  4. Brush the mixture evenly over the fillets.
  5. Top each fillet with a lemon slice.
  6. Bake for 15–18 minutes, or until the fish flakes easily and reaches 63°C internally.
  7. Rest for 2–3 minutes.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • Fresh herbs produce the brightest taste.
  • Avoid overcooking, as tilapia cooks quickly.
  • Pat the fish dry before seasoning.
  • Use freshly squeezed lemon juice whenever possible.
  • Check the fish two minutes before the recommended cooking time.
