Step 1: Cook the Rice
- Rinse the brown rice under cold water.
- Add the rice and water to a medium saucepan.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 25–30 minutes until tender.
- Remove from heat and let it sit for 5 minutes.
- Fluff with a fork before serving.
Step 2: Prepare the Chicken
- Pat the chicken breasts dry with a paper towel.
- Place in a mixing bowl and add olive oil, paprika, garlic powder, salt, and black pepper.
- Rub the seasoning evenly over the chicken.
- Let it sit for 10–15 minutes to absorb flavour.
Step 3: Cook the Chicken
- Heat a grill pan or frying pan over medium-high heat.
- Place the chicken in the pan and cook for 6–7 minutes on one side.
- Turn and cook for another 6–7 minutes until fully cooked.
- Check that the internal temperature reaches 75°C.
Step 4: Rest and Serve
- Remove the chicken from the pan and let it rest for 5 minutes.
- Slice the chicken and serve with brown rice.
- Add lemon juice or fresh herbs if desired.
Notes
- Do not overcook the chicken to avoid dryness
- Keep the lid on while cooking rice for best texture
- Resting the chicken helps retain juices
